It's my dad's birthday and decided to bake a cake for him. I couldn't decide on what to bake and ended up baking this carrot cake. My first time confronting this kind of cake. Carrots with butter and flour??? Weird combination! But ended up tasted like butter cake with lotsa nuts!
You need:
175g grated carrot,
50g raisins,
50g dried cranberries,
100g toasted walnuts (chopped),
175g butter,
160g sugar,
1 tsp vanilla essence,
3 eggs,
200g plain flour (sifted)
1 tsp baking powder,
1/2 tsp cinnamon,
1/4 tsp salt.
1) Cream butter and sugar till light and fluffy. Add eggs one at a time, beating well. Add in vanilla essence.
2) Fold in sifted flour, baking powder, cinnamon and salt.
3) Stir in carrot, raisins, cranberries, and walnuts.
4) Transfer into lightly greased baking tray. Preheat oven at 180 degree celcius.
5) Bake for 40 mins at 180 degree celcius and 160 degree celcius for 10 mins.
There you go! The nutty and crunchy texture as well as the sweet raisins and cranberries just make you can't stop eating it.
This cake was suppose to bake for my dad's birthday but my mom ended up eating the whole cake alone. She loves it! :)
